CHRISTMAS IN FEBRUARY????
Today the boys received a package from the Leclerc Family back in NH.  It was a couple little gifts for them for Christmas.  A gift for Chantz has already been read through a 100 times.  It was a photo book that Melissa had made of Tim & Chantz from the age of 1 until right before we left.  Tim & Chantz are best buddies and will continue to be so, just with a few extra miles inbetween.  It was definitely a heartfelt gift and it brought tears to my eyes watching Chantzelor read it over and over.  Thank-you guys so much!  You made two little boys VERY happy today! (I think the neighborhood knew that we got a package bc Chantz was so excited that he was yelling 'It's for us!  It's for us!'  Like, who else would it be for on our front porch? LOL)

BLUEBERRY MUFFIN RECIPE
Ingredients
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon
Directions
1.Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
2.Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
3.To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
4.Bake for 20 to 25 minutes in the preheated oven, or until done.


***I do a couple things differently in my recipe.  I use all organic products to begin with but I also substitute the milk with rice milk, the vegetable oil with olive oil, the butter is for real not margarine & the sugar is cane sugar.  I believe it was organic white flour that I used...I tested it with the whole wheat this week and they were good but didn't stick together as well.***
